Wow. It seems like forever since I’ve had a breath of fresh air–I guess grad school does that to you. Especially when earlier this week, I started my clinical rotations as a first-year Anesthesiologist Assistant student, and that means arriving at the hospital at 5:30am to set up for the day! How does that make the mornings?
One word: CRAZY.
Well, if you suffer from similar mornings, then we Twins have a special and delicious solution for you that has not only saved us time but also given us a huge peace of mind! Furthermore, with this recipe, we no longer have to worry about waking up our roommate!
So what is our solution? Overnight oatmeal, but not just any overnight oatmeal. The traditional recipe requires you to mix together all of the required ingredients and then stick the oatmeal in the fridge overnight. However, our method is different; it results in a creamier, thicker, and chewier oatmeal. Check out our recipe below, and we’re sure you won’t be disappointed!
1/2 cup oatmeal
1 cup water
1/2 cup milk (we used soy)
1/2 cup greek yogurt (ours was strawberry)
The rest of our recipe is really quite simple. First, we combined the oatmeal and water in a microwave safe bowl, and then microwaved it for about a minute. However, this number could vary from 1 to 2 minutes depending on how strong your microwave is and/or how chewy you want your oatmeal to be. After the mixture is cooled, we simply added the rest of the ingredients and stored it in the fridge overnight for a nice, refreshing, and satisfying breakfast the next morning!
